Black Rice, also known as Emperor’s rice was once reserved only for the Emperor and Aristocrats. It is rich in Anthocyanins which give this rice its unique color. When cooked, it turns into a deep purple color. Black Rice grows best in tropical zones in North East India with low yield making it one of the rarest varieties of rice.
